Pork Chops- Coppa

All our pork is heritage-breed and pasture-raised right here at TerraPurezza. Our pigs exclusively eat pre-consumer food waste from Whole Foods Market, along with native grasses and grub in the pasture. Custom butchered in-house.


Coppas are cut from the shoulder of the pig, essentially a cross-section of the butt. On the farm we like to refer to the coppa as the "pork ribeye" because of its heavy marbling and deep flavor. Team favorite!
